Instagram Round-Up

One of the main reasons (excuses?) I can sometimes neglect this blog is the ease of Instagram. Quickly uploading a photo already in my phone—or even taking the photo through the app—adding a couple of quick remarks or a recipe, hashtagging it, and automatically sharing to my other social media accounts is so convenient! Too convenient. So I’ve decided that once a week I will share my favorite IG posts on my blog, if only for my own posterity. And if you’re not following me on IG yet, find me here: @belowthefork

Enjoy your hump day!  xo Meridith

Oh how I love you, summer produce! Can’t beat the convenience of REAL fast food that’s naturally gluten-free!
red peppers.jpg
This is the way bell peppers are supposed to look! Long, lean, uniquely shaped and even a bit malformed—-NOT those perfectly round, uniform ones you find at the grocery store. (I promise these are not artificially shined…the lighting is weird in this produce stand)
fresh berry smoothie.jpg
I’m always a proponent of frozen fruits & veggies, but they just can’t compare to the taste of freshly picked berries blended into a nutrient-packed smoothie!
This is my first Jamberry manicure! I’m toying with the idea of putting a review on my blog next week so stay tuned!
Creamy avocado pesto.jpg
This is seriously one of my favorite recipes of mine! Search “avocado pesto” in the top right-hand search bar of this blog page to find my recipe!
Deagan pesto.jpg
My pesto is so good even my 7 month old LOVES it!
Gluten Free Waffles.jpg
No 4th of July weekend would be complete without homemade gluten-free waffles!
Just me and the dance floor.jpg
I love to dance! 1.5 weeks till I become a certified Zumba instructor…can’t wait to teach from that stage!

I wondered how the Jamberry manicure ones worked with shorter nails. I need to get some ASAP now 🙂

Yes! I keep them very short so I don’t scratch my kiddos. I’m on day 2 with them so the verdict is still out on how long they last.
