Maybe it’s because I just drove up to New Hampshire and back this past weekend, but I feel so inspired recently to make it my personal mission to prove the fastest food is healthy food. It won’t be elaborate recipes obviously, but I guarantee it will be more satisfying than the crap they sell at the drive-thru or convenience store. Healthy options are everywhere—YOU just have to CHOOSE them.

Even though I feel like we’re in a constant battle with big food companies and their unethical marketing tactics, I do have to say that I’m seeing some changes for the better. On Garden State Parkway yesterday I went to a rest stop that of course had the usual Burger King, Sbarro and Dunkin Donuts (love their coffee, NOT their “food”) but in the Travel Mart I found a whole section of protein bars, including ones labeled ‘gluten-free.’ I also scored my favorite adult juice box of coconut water. Plus, with my 6 month old baby in tow, it was significantly faster to buy and eat these two items, than to wait in line for a “burger” made from yoga mats.

In launching my new “real fast food” initiative, I will post a bunch of easy meals. Ones that can be enjoyed by the crazed stay-at-home-mom, the over-scheduled worker, and everyone in between.

First #fastfoodforreal entry: my go-to for a quick breakfast or lunch. Total time for the clean, gluten-free, vegan bowl of oatmeal with almond milk and fresh blueberries: 2 minutes 20 seconds. The toppings are endless–berries, banana, flaxseeds, peanut butter, protein powder, unsweetened coconut flakes, etc. Doesn’t get much faster than that!
