I always seem to go months at a time before remembering how yummy and healthy hummus is. Last weekend we enjoyed a store bought container of hummus, and it was good, but some of the ingredients listed on the label seemed unnecessary at best. I have made my own before, but today I made up my own recipe from scratch! Like all my recipes, it’s super easy to make. I’m sure there will be tweaks over the next couple times I make it, but I wanted to share with you today in honor of Superbowl Sunday!

Before I launch into this recipe though, I just want to give a shout out to one of my favorite items in my refrigerator: minced garlic! It is the perfect ingredient for quick meals and it helps simplify my hummus recipe even more!

Hummus a la Meridith

Total Time: 10 minutes | Serves: 15

Ingredients:

  • 1 can (15.5 oz) garbanzo beans (also called chick peas)
  • 2-3T extra virgin olive oil
  • 3 tsp minced garlic (about 5 cloves)
  • 6 shakes of hot sauce (or to taste)
  • 3T pitted kalamata olives
  • Salt & pepper, to taste
  • 2T chopped kalamata olives

Serve with:

  • baby carrots
  • pea pods
  • multi-grain chips
  • bell peppers
  • celery
  • cucumbers
  • or just spread on (gluten-free) bread as a healthy substitute to mayonnaise!

Directions:

  1. Put chopped kalamata olives to the side
  2. Drain liquid from can of garbanzo beans
  3. In a food processor, add garbanzo beans, extra virgin olive oil, minced garlic, 3 shakes of hot sauce and 2T kalamata olives
  4. Blend until almost smooth
  5. Add remaining 3 shakes of hot sauce, 1T kalamata olives, and salt & pepper (there’s no science behind this but it’s a good opportunity to sample taste and adjust accordingly)
  6. Blend until completely smooth
  7. Transfer to serving dish and top with chopped kalamata olives (or leave on side in separate dish like I did in photo above)
  8. Serve chilled or room temperature
  9. Enjoy!

**Full disclosure: the hummus in my photo is from last weekend with the store bought hummus, but the photo just came out so well I figured why re-create the wheel šŸ˜‰
